How do I change the name of a game on the Apple App store?

if i remember correctly you can only change the name when you upload a new version. same thing with screenshots and keywords

Yep, thats correct. Add a new version then edit the meta data section. Then just re-upload the same binary making sure its version 1.1 or the like.
